How to Make Salsa from Rosarito

We had traveled down to Rosarito that day and we decided to stop and check out these properties. We were introduced to Ed and Olga, who immediately took us into their house and started feeding us. She made us some quesadillas, and she brought out her “special” salsa. I was in love with them because they were so sweet and because they just took us into their house and allowed us to spend the night. They did not even know us or vice a versa. As we were getting ready to leave she brought over a jar with some of her “special” salsa for us to take home, and the recipe so I could continue to make it. Which I still do to this day. it is one of my family’s favorites, and of course it always reminds me of that sweet couple that took us in to their house.

Ingredients

  • 15 dried Arbol Chile pods
  • 1 16 oz can chopped tomatoes
  • pinch of oregano
  • 1 tsp of soy sauce
  • 2 cloves of garlic
  • 2 tsp of white vinegar
  • salt and sugar to taste

On a griddle, cook the chile pods until they are brown (without the stems)
Open the canned tomatoe sauce and pour into blender
Add all of the ingredients and blend until smooth.
Season to taste with Salt and Sugar
Serve with Chips
Enjoy!!
