Introduction: Everyday the city of San Diego sends approximately 600 trucks fill of waste to the Miramar Landfill, disposing of more than 1.4 million tons of waste a year. At this rate the landfill will be closed in 2012. Zero Waste San Diego is an organization committed to maximizing waste management and conservation of resources. The Zero Waste Resolution maintains that 75% of San Diego’s waste can be diverted from the landfill, being recycled and reused or disposed of properly. The Restaurant Composting Program, an effort to reuse restaurant food waste as energy, mulch and high quality compost, is part of this resolution.
