This is a great breakfast dish that’s been in my family for a while. It was tradition in my parents house growing up that we would have it for breakfast on special days such as Thanksgiving and Christmas morning and it’s a tradition I’ve gladly carried on with my own household though you don’t need a special reason for it. It’s a great pizza like recipe in that you can really put anything on it that you want. I’ll present the standard way of doing it but as you’ll see it’s quite the flexible casserole dish.
This recipe will make enough for 8-10 adults
What You’ll need:
- Preheat oven to 425 degrees
- One casserole dish
- 12 dozen eggs
- 1 block of cheese of your choice/ or a pre shredded 1lb. bag
- 1 pound of sausage
- 1 pound of bacon
- 3/4 bag Hash browns in a style of your choice (shredded/country/O’Brien)
- green chilies
Let’s Get Started:
- Lightly grease the pan and add in the hash browns distribute them evenly about the pan place the pan in the oven for 45 minutes to an hour
- While hash-browns are in oven, cook bacon and sausage thoroughly, crumble sausage and dice bacon to desired size and set aside
- crack the dozen eggs into a large mixing bowl and mix well, (as if you were making scrambled eggs) you may salt, pepper or milk to taste
- If you have a block of cheese also go ahead and grate it now
Once the hash browns have finished remove from oven and poor half of the egg mixture into your casserole pan then add cheese and meat in alternating layers ending with the green chillies, once you have finished all the layers add the rest of the egg mix into the dish. Place casserole back in oven and cook for 30 to 45 minutes until you see the egg rising to the top of the dish . Let cool for 10 minutes and slice into pieces and serve with salsa.
